It is similar to Sindhi Biryani but Memoni Biryani is normally prepared with lamb, potatoes and tomatoes while Sindhi Biryani can be prepared with all kinds of meat.

Explanation of ingredients

Ginger: has an intense sharp taste. Can be used in, for example, desserts, bread or biscuits. In India it is widely used with fish.
Cinnamon: can be used in both spicy and sweet dishes due to its wonderfully warm and sweet taste.
Clove: gives a herbaceous and spicy flavor to dishes.
Cardamom: herbaceous plant of the ginger family. It has a pungent aroma and a sweet taste with a hint of lemon, camphor and bergamot. The green variant provides spice and freshness. The black variety is suitable for more powerful dishes such as curries and stews.
Fennel: aids digestion and gives fresh breath. Fennel tea is used for coughing.
Coriander: the leaves have a lemony flavor, while the seeds have a slightly sweet, aniseed flavor.
Fenugreek: it is a plant of the legume family. The seeds can be used in salads, vegetable dishes or curry sauce, for example. It has its own specific flavor.

Preparation of Memoni Mutton Biryani Masala

For 500 grams of meat:

  1. Add 1 cup of ghee to the pan and sauté 2 onions until golden brown.
  2. Add 500 grams of pre-cooked meat, 1 tablespoon of garlic paste, 1 tablespoon of ginger paste and fry for 1 minute, stirring constantly.
  3. Add 40 grams of Aachi Memomi Mutton Biryani Masala and fry for 5 to 6 minutes with constant stirring.
  4. Add 3 to 4 cups of water, 100 grams of yogurt and 2 diced potatoes.
  5. Cover the pan and cook the meat until it is tender.
  6. Add 2 tomatoes, 4 green chilies and a tablespoon of lemon juice.
  7. Stir well and remove the pan from the heat.
  8. In a separate pan, cook 500 grams of Basmati rice with 1 liter of water and the desired amount of salt.
  9. Cook the rice until it is 3/4 cooked.
  10. Drain the rice.
  11. Place 3/4 of the rice evenly in a pan and spread the meat curry over it.
  12. Add the last part of rice over the curry.
  13. Close the pan and cook everything on a low heat for 10 minutes.
  14. The delicious Memoni Mutton Biryani is ready to be served.

After opening, store the rest of the spice mix in an airtight container and use a clean, dry spoon.
