In this third part we will make chicken mulligatawny soup:

This recipe is an Anglo-Indian adaptation of a Tamil soup Milagu Thanni. 'Milagu' means pepper and 'Thanni' means water. This soup is made with fiery flavors of chili pepper and no black pepper. It usually contains meat, lentils or rice, turmeric and some other spices.

Preparation:
  1. Simmer lentils in stock with turmeric for 30 minutes.
  2. Place the potato in the pan and simmer for 20 minutes.
  3. Puree the soup and season well.
  4. Sprinkle the diced chicken with salt and pepper.
  5. Heat oil in a pan and add ginger paste, garlic paste and coriander and chili powder.
  6. Add the chicken and stir-fry for two minutes before adding the pureed soup.
  7. Tighten with lemon juice and garnish with coriander.
