Jaggery is sold in disc shape, inverted pudding bowl shape, inverted coffee cup or bucket shape, or simply in handy chunks. You can break off small pieces and use them in curries, lentil soup, chutneys, desserts, pastries, etc. or you can grate some with a (microplane) grater. You can use it in recipes that replace brown sugar or cane sugar, but you can also simply replace it with brown sugar, cane sugar, palm sugar or even granulated sugar.
