It is fermented according to traditional methods with a relatively large amount of soybeans and is aged for 2 to 3 years in cedar barrels.
In addition to sweet, salty, sour and bitter, the Japanese have a fifth taste that they use to describe miso: umami. It means something like a savory and 'deep' taste, with salty undertones. Try it yourself and be surprised by this complex, but delicious ingredient.
