Couscous is a grain that is often used in North African cuisine. Roughly ground durum wheat is formed into balls that are then dried.
Delicious in combination with a tasty stew, in a salad or as a substitute for potatoes or rice.
Pour an equal amount of stock to taste over the couscous and cover with a lid or tea towel. Let it soak for a few minutes until the stock has dissolved and stir the grains with a fork. Season to taste with salt, pepper and a drizzle of olive oil.
