The black eye bean is a cream-colored bean with a black dot. They contain a lot of vegetable protein and essential amino acids. The black-eyed bean is a good meat substitute.

Due to the complex carbohydrates, these digest slowly, so that the blood sugar level remains stable. Ideal for diabetics.

The beans contain many minerals (calcium, zinc, sodium, iron, magnesium, manganese and phosphorus), vitamins (B1, B2, B3, B5 and B6, E, K and a lot of folic acid) and fiber.
