Most days we live our lives in a rush. We are always busy with work or activities, often we multitask to get as much done as possible. In such a routine, cooking and eating can become a tedious task, especially when other planned activities take up all our time.

Mornings can be especially hectic and even working from home doesn't lessen the time pressure we face in the kitchen every morning.

In the morning we want to prepare something filling and tasty, but often we get bogged down in the time it takes to prepare elaborate breakfast dishes. But we have a few tips.

In this five-part series, we will discuss a few North Indian recipes in the coming weeks that take us less than 30 minutes to prepare. They are not only filling, but also taste great at the breakfast table.

In this first part we make Sooji Besan Cheela

This quick and easy recipe calls for sooji (semolina), besan (chickpea flour), curds, onions, tomatoes, and chilies. Make the batter, bake it like thin pancakes and we have a delicious, healthy and light breakfast ready in minutes. Serve it warm and with your favorite chutney.

Preparation:

  1. Pour the curds into a bowl and add some water to get a smooth batter.
  2. Add semolina, chickpea flour and some salt.
  3. Keep it aside for 20-15 minutes.
  4. In the same bowl, onion, tomatoes, green chilies, garlic and red chili powder.
  5. Add a little more salt if necessary.
  6. Heat some oil in a flat pan.
  7. Pour a ladle of batter in the center and swirl it around to form a thin pancake.
  8. Fry lightly brown on both sides.
  9. Serve hot.
