Ingredients for Andhra Pepper Chicken:
- 500 grams of chicken legs
- 10 grams of turmeric
- 50 grams ginger-garlic paste
- 100 grams of green chili paste
- Salt to taste
- 50 ml lemon juice
- Oil for frying
- 5 grams of cumin seeds
- 2 grams of curry leaves
- 100 grams of onions
- 50 grams of coriander powder
- 50 grams of ground pepper
Preparation of Andhra Pepper Chicken:
- Finely chop the onions and coriander leaves.
- Marinate the chicken legs with turmeric, ginger-garlic paste, green chilli paste, salt and lemon juice. Heat oil in a kadai and add cumin seeds.
- After they start to sizzle, add the sliced onions and fry them until they turn golden brown.
- Add curry leaves, coriander powder and ground pepper. Fry for another 2 minutes and then add the marinated chicken.
- Sear over high heat, then reduce heat. Simmer for another 15 minutes while stirring occasionally.
- Sprinkle with chopped coriander leaves and cook for another 2 minutes.
- Garnish with additional ground pepper and coriander leaves before serving.
