While these recipes are quick and easy, they're also filling and healthy, with ingredients like vegetables, eggs, and oatmeal.

Most days we live our lives in a rush. We are always busy with work or activities, often we multitask to get as much done as possible. In such a routine, cooking and eating can become a tedious task, especially when other planned activities take up all our time.

Mornings can be especially hectic and even working from home doesn't lessen the time pressure we face in the kitchen every morning.

In the morning we want to prepare something filling and tasty, but often we get bogged down in the time it takes to prepare elaborate breakfast dishes. But we have a few tips.

In this five-part series, we will discuss a few North Indian recipes in the coming weeks that take us less than 30 minutes to prepare. They are not only filling, but also taste great at the breakfast table.


In this second part we make Poha Oatmeal

Start your morning with this hearty, healthy and absolutely delicious poha with a twist by making it with oatmeal. Don't worry, it still takes less than half an hour to cook. Add spices and crunchy nuts for a perfect balance of taste, texture and health.

Supplies:

Cooking pan
Frying pan or Wok


Ingredients:

  • 1 cup oatmeal
  • 1 onion, finely chopped
  • 2 green chillies, finely chopped
  • 1 tomato, finely chopped
  • 1/3 cup Kabuli Chana, cooked
  • Carrot (diced)
  • 3 bell peppers (diced)
  • 2 tablespoons peanuts, roasted
  • 2-3 grams of mustard seeds
  • 10 g curry leaves
  • red chilli pepper
  • Coriander, finely chopped
  • 1 tablespoon lemon juice
  • Salt to taste
  • 1/2 teaspoon turmeric powder
  • Pomegranate pearls for garnish


Preparation:

  1. Steam all vegetables and keep them aside.
  2. Heat oil in a heavy bottomed pan or wok.
  3. Add the mustard seeds and let it crackle, then add the curry leaves and whole red pepper.
  4. Now add onions and green chillies and fry over medium heat until light brown in color.
  5. When the onions are soft, add the tomatoes, oatmeal, turmeric powder, steamed vegetables, cooked kabuli chana, roasted peanuts, salt and sugar.
  6. Gently stir the ingredients in the pan until all ingredients come together.
  7. Lower the heat and let the poha cook in the steam along with the vegetables. This will take about 3 to 4 minutes.
  8. At this stage, turn off the heat and stir in the juice of one lemon and add the coriander leaves.
  9. Check the salt and seasonings and adjust them to your taste and garnish with pomegranate pearls.
