Most days we live our lives in a rush. We are always busy with work or activities, often we multitask to get as much done as possible. In such a routine, cooking and eating can become a tedious task, especially when other planned activities take up all our time.

Mornings can be especially hectic and even working from home doesn't lessen the time pressure we face in the kitchen every morning.

In the morning we want to prepare something filling and tasty, but often we get bogged down in the time it takes to prepare elaborate breakfast dishes. But we have a few tips.

In this five-part series, we will discuss a few North Indian recipes in the coming weeks that take us less than 30 minutes to prepare. They are not only filling, but also taste great at the breakfast table.

In this third part we make masala omelettes

Eat it with bread, roti or just on its own. The masala omelette can be a delicious and filling meal for the morning, thanks to the combination of eggs, onions, tomatoes and flavorful spices. Make it a delicious taste explosion by adding butter and various vegetables. And don't forget the spices! Add some chaat masala for a spicy taste.

  • 1/2 onion, chopped
  • 1 tomato, chopped
  • 2 green chillies, chopped
  • 3 tablespoons of olive oil
  • 3 eggs
  • Salt and pepper (to taste)
  • 2 tablespoons of butter
  • Handful of fresh coriander leaves
  • Handful of spring onions, chopped
  • Handful of cheese, grated
  • Burger bun


  1. Heat olive oil in a pan and add onion, tomato and green chillies.
  2. Allow the vegetables to sweat slightly, then turn the heat to low and let the vegetables cook.
  3. Then break 3 eggs and beat them fine.
  4. Add salt and pepper to taste.
  5. Mix the eggs and vegetables and fry them.
  6. Then heat the pan with butter and pour the mixture into the pan.
  7. Sprinkle fresh coriander leaves, spring onions and grated cheese on the mixture and let it bake.
  8. Make two folds of the omelette.
  9. Turn off the heat and add butter under the omelet.
  10. Serve with a toasted bun and garnish with fresh coriander.
