Most days we live our lives in a rush. We are always busy with work or activities, often we multitask to get as much done as possible. In such a routine, cooking and eating can become a tedious task, especially when other planned activities take up all our time.

Mornings can be especially hectic and even working from home doesn't lessen the time pressure we face in the kitchen every morning.

In the morning we want to prepare something filling and tasty, but often we get bogged down in the time it takes to prepare elaborate breakfast dishes. But we have a few tips.

In this five-part series, we will discuss a few North Indian recipes in the coming weeks that take us less than 30 minutes to prepare. They are not only filling, but also taste great at the breakfast table.


In this fifth part we make Masala Anda Bhurji

This is the simplest yet one of the tastiest items of this series. This Indian form of scrambled eggs is a tasty treat for any egg lover. It's quick, easy and fun to make. You can add pav bhaji masala and other spices and add coriander for extra flavor.

The most popular Indian breakfast Anda bhurji is just a few steps away with this quick and easy recipe. Eggs are ideal if you're trying to prepare a meal in under a minute, and anda bhurji (scrambled eggs) is by far the easiest to prepare.

There are many variations to make anda bhurji. Some people make it with just black pepper, others with chili powder. Some prepare it with garlic and mushrooms, but we make our anda bhurjji by simply mixing the egg with Indian spices.

Supplies:

Frying pan or Wok


Ingredients:

  • 2 tsp oil
  • 3 teaspoon butter
  • 1 teaspoon garlic
  • 2 teaspoon green chilies
  • 2 teaspoon ginger
  • 6-7 curry leaves
  • 1/2 cup onion, finely chopped
  • 3 teaspoon salt
  • 2 tsp turmeric powder
  • 2 teaspoon chili powder
  • 1 1/2 teaspoon pav bhaji masala
  • 1 teaspoon coriander stems
  • 1/2 cup tomatoes, sliced
  • 4 eggs
  • coriander leaves


Preparation:

  1. Take a pan and pour oil into it.
  2. Add butter, garlic, green chilies, and ginger to the pan.
  3. Stir well until they are golden brown.
  4. Now mix the curry leaves and the chopped onions in the pan and fry it together.
  5. Add salt, turmeric powder, chilli powder, Pav Bhaji masala and mix well.
  6. Top with coriander stems and chopped tomatoes and mix in the pan with the other ingredients.
  7. Now add the eggs to the pan and beat them well until cooked.
  8. Pour over some butter and garnish with coriander leaves.
  9. Serve warm with buttered bread.

Recipe Notes:
If you like, you can also add green peas to the recipe while cooking.
